Chilled Corn Soup

3 Ears Fresh Corn
1 medium Onion, diced small
1 Tbsp chopped Garlic
1Tbsp Butter
4 1/2 cups Water
Salt & pepper to taste
2 Tbsp Chopped Chives, for garnish

Cut corn kernals off the cob, save cobs. Melt butter, saute onion 3 - 5 minutes
'til translucent, add garlic, cook one minute, add cobs and water, cook 5 minutes, remove cobs and discard.
Puree and season with salt & pepper to taste.
Strain through mesh seive.

 

Chill at least 2 hours.
Garnish with chopped chives.
